- 16 oz blackberries
- 1 tbsp lemon juice (half lemon)
- 1 tsp vanilla
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
INGREDIENTS (COBBLER TOPPING )
- 1 large egg
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 cup flour
- 1 tsp lemon zest
- 6 tbsp butter, melted
INSTRUCTIONS
- Preheat oven to 375°F.
- In a mixing bowl, combine the blackberries, lemon juice, vanilla, 1/4 cup brown sugar, 1/4 cup granulated sugar, and cornstarch and mix.
- Place the blackberry mixture into a greased 8-inch square baking dish.
- To make the cobbler topping, stir together the egg, 1/4 cup brown sugar, 1/4 cup granulated sugar, flour, and lemon zest in a mixing bowl until mixed.
- Sprinkle the cobbler topping over the Blackberry mixture.
- Drizzle the melted butter over the cobbler topping.
- Bake for 35 minutes or until the cobbler topping is lightly browned. Rest for 10 minutes. Serve with ice cream.
