The flap meat is marinated in a citrusy blend of beer, garlic, and spices, then grilled to a perfect char. Topped with fresh cilantro, Cotija cheese, and a tangy squeeze of lime, these carne asada tacos are simple to make and bursting with authentic, savory flavors.

INGREDIENTS (TACOS)
  • 1-2 pounds flap meat
  • Corn tortillas
  • Cotija cheese
  • Onion, finely chopped (for serving)
  • Cilantro, finely chopped (for serving)
  • Quartered limes (for serving)
INGREDIENTS (FLAT MEAT MARINADE)
  • 1/2 onion, sliced
  • 1 jalapeno or 4 chili peppers, chopped
  • 4 cloves garlic, sliced
  • 1 orange, juiced
  • 1/2 cup cilantro, roughly chopped
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 12oz beer, lager or amber
  • 2 tbsp Memphis Marinades 901 Reserve or Mild Memphis Rub & Shake
  • 1 tbsp oregano
  • 1 tbsp cumin
INGREDIENTS (ROJO SALSA)
  • 1.5 lbs Roma tomatoes, roughly chopped
  • 1 serrano pepper, roughly chopped (remove seeds and membranes if desired for less spice)
  • 1/2 onion, finely chopped
  • 1/2 cup cilantro, finely chopped
  • 2 tbsp olive oil
  • 1 tsp salt

INSTRUCTIONS

  1. In a large mixing bowl, combine the Flap Meat Marinade ingredients until thoroughly mixed.
  2. In a marinading dish, place the flap meat in the dish then pour the marinade over the flap meat and place in the refrigerator for at least 1 hour.
  3. Roughly chop the tomatoes and serrano pepper.
  4. Add the chopped tomatoes and serrano pepper to the blender. Blend the salsa to your desired consistency.
  5. Heat 2 tbsp olive oil in a pot.
  6. Pour the blended salsa into the pot. Bring to a boil and then reduce heat to low. Simmer for 15 minutes. Salt to taste. Let cool slightly before adding onion and cilantro. Place in the refrigerator until ready to serve, or serve warm if desired.
  7. Pre-heat grill to medium-high.
  8. Remove steak from marinade and discard any vegetables.
  9. Grill meat for 4 minutes a side or until desired doneness.
  10. Remove steaks and allow to rest for 5-10 minutes before slicing against the grain. Season to taste with salt and freshly ground black pepper.
  11. Heat corn tortillas in a pan and cover in a kitchen towel before ready to build your taco.
  12. Build your taco with steak, onion, cilantro, cotija cheese, lime, and salsa.
  13. Enjoy.
