INGREDIENTS
- 1 15 oz can chickpeas, drained and rinsed
- 1/2 tsp baking soda
- 1-2 cloves garlic, minced
- 1 tbsp lemon zest
- Juice of 1 lemon
- 3 tbsp dill, chopped
- 1/4 cup tahini
- 2 tbsp iced water
- 1/2 tsp salt
- Olive oil
- Memphis Marinades Mild Memphis or 901 Reserve Rub & Shake
DIRECTIONS
- In a small pot, place the chickpeas and baking soda then cover with water. Simmer for 5 minutes, allowing the chickpeas to soften. Remove the chickpea skins as they fall off.
- Drain the chickpeas, discard the skins, and rinse the chickpeas under cool water.
- In a food processor or blender, add the chickpeas, garlic, lemon zest, lemon juice, dill, tahini, iced water, and salt. Blend until it has reached your desired consistency.
