INGREDIENTS
- 2.5-3 lbs butternut squash (peeled and chopped into ½ inch cubes)
- 3 tbsp olive oil
- 1/4 tsp salt
- 4 oz cubed pancetta
- 1/2 shallot, minced
- 2 cloves garlic, minced
- 2 tbsp Memphis Marinades Mild Memphis or 901 Reserve Rub & Shake
DIRECTIONS
- In a mixing bowl, add the butternut squash, olive oil, and salt and mix together.
- At 400°F, air fry squash for 10 minutes and then shake around thoroughly.
- Add the pancetta to the air fryer and continue to air fry at 400°F for another 8 minutes. Shake around, then air fry again for another 7 minutes.
- Add the shallots, garlic, and Memphis Marinades Mild Memphis or 901 Reserve Rub & Shake to the air fryer and air fry at 375°F for 5 minutes.
