INGREDIENTS
- 1 3/4 sticks of butter (14 tbsp)
- 1/2 cup granulated sugar
- 3/4 cups packed brown sugar
- 1 tsp salt
- 1 large egg
- 1 large egg yolk
- 2 tsps vanilla
- 1 3/4 cup flour
- 1/2 tsp baking soda
- 2 cups oatmeal
- 1 1/2 cups sweetened coconut flakes
- 1 cup chopped dates
INSTRUCTIONS
- Preheat oven at 375°F.
- In a 2 quart stainless steel sauce pan, melt butter over medium-low heat. Once melted, increase heat to medium, stirring and scraping up any brown bits until golden yellow.
- Set up your stand mixer with the whisk attachment. In the stand mixer bowl combine the butter, granulated sugar, brown sugar, salt, eggs, and vanilla. Whisk on low for 30 seconds then rest for 3 minutes and then repeat that process 2 more times. (can also whisk manually without the stand mixer).
- Add the flour, baking soda, coconut flakes, oatmeal, and dates to the butter mixture and mix together.
- Using a medium scooper, scoop your cookies onto a sheet pan lined with parchment paper.
- Press the cookie scoops down so they become more flat before placing in the oven.
- Bake for 10-12 minutes.
