Seasoned with our 901 Reserve Rub or Mild Memphis Rub and marinated in a honey and Carolina Mustard concoction, this tenderloin is smoked to perfection and paired with a homemade apple sauce made from tart Granny Smith and sweet Honeycrisp apples. INGREDIENTS
- 1 pound pork tenderloin
- Memphis Marinades 901 Reserve Rub or Mild Memphis Rub
- 1/2 cup Memphis Marinades Carolina Mustard BBQ Sauce
- 1/2 cup honey
Apple Sauce
- Water
- 2 granny smith apples peeled, cored, and cut into cubes
- 2 honey crisp apples peeled, cored, and cut into cubes
- 1 lemon peel
- Lemon juice from half a lemon
- 1/4 tsp salt
- 1 tbsp brown sugar
INSTRUCTIONS
- Generously rub 901 Reserve Rub or Mild Memphis Rub all over the pork tenderloin. Place in a marinating container.
- Mix the honey and Carolina Mustard BBQ sauce together to make the marinade.
- Combine the marinade with the pork and place in the refrigerator for at least an hour or overnight.
- Prepare the apple sauce.
- Add 1 inch of water to a small pot. Add prepared apples to the pot.
- Heat over medium heat until water begins to boil.
- Add lemon peel, lemon juice, salt, sugar and stir to combine.
- Reduce heat to low. Stir often. Add water if needed.
- When apples are tender, remove from heat and mash or blend with an immersion blender. Set aside.
- Bring pork to room temperature.
- Heat smoker to 225°F.
- Place pork tenderloin in the smoker.
- Smoke for about 1.5 hours until an internal temperature of 140 °F – 145 °F.
- Rest for 10 – 15 minutes. Slice and serve with apple sauce.
