INGREDIENTS
  • 1 3/4 sticks of butter (14 tbsp)
  • 1/2 cup granulated sugar
  • 3/4 cups packed brown sugar
  • 1 tsp salt
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 3/4 cup flour
  • 1/2 tsp baking soda
  • 1 cup strawberry, diced small
  • 1 cup white chocolate chips
  • 3/4 cup chopped almonds

INSTRUCTIONS

  1. Preheat oven at 375°F.
  2. In a 2-quart stainless steel saucepan, melt the butter over medium-low heat. Once melted, raise the heat to medium, stirring and scraping up any browned bits until the butter turns a golden yellow.
  3. Attach the whisk to your stand mixer. In the mixer bowl, combine the butter, granulated sugar, brown sugar, salt, eggs, and vanilla. Whisk on low for 30 seconds, then let it rest for 3 minutes. Repeat this process two more times. (Alternatively, you can whisk manually or with a handheld electric mixer if you don’t have a stand mixer.)
  4. Add the flour, baking soda, strawberry, white chocolate chips and almonds to the butter mixture and mix together.
  5. Using a medium scooper, scoop your cookies onto a sheet pan lined with parchment paper.
  6. Press the cookie scoops down so they become flatter and more uniform before placing in the oven.
