INSTRUCTIONS

  1. Slice the rack of lamb into individual chops.
  2. In a large mixing bowl, combine the yogurt marinade ingredients until thoroughly mixed: plain Greek yogurt, Memphis Marinades Carolina Mustard BBQ Sauce, and Memphis Marinades 901 Reserve Rub or Mild Memphis Rub.
  3. Add the lamb chops to the yogurt marinade and mix until evenly coated. Let marinate for at least 1 hour to overnight.
  4. In another mixing bowl, combine the mint yogurt sauce ingredients until thoroughly mixed: plain Greek Yogurt, mint leaves, garlic, lemon juice, lemon zest, and Memphis Marinades 901 Reserve Rub or Mild Memphis Rub. Chill in the refrigerator for at least 30 minutes. You can keep it in the refrigerator for up to 4 days.
  5. Preheat the grill to medium-high heat.
  6. Remove most of the marinade from the lamb chops so the yogurt doesn’t burn.
  7. Grill the lamb chops to your desired temperature. 3 minutes a side will be about medium. Remove from the grill and rest for 5–7 minutes.
  8. Serve lamb chops with the mint yogurt sauce.
  9. Enjoy.
